Arlene- If you spent the next 24 hours after eating gluten with total
arrest of peristalsis in your gut you might be motivated to give it up
too.:-)

I was avoiding carbohydrates altogether and eating mostly the Zone Diet
for a few years but Jan. 2007 I injured my knee doing a lot of hopping
while dancing. It never seemed to get really strong though it would
always be doing better until the next time I strained it badly. After
starting the Budwig diet in October my knee started getting stronger,
but still having a little pain the day after I would dance, but in the
last couple of weeks there has been NO pain after dancing and my knee
is feeling as good as before I injured it! I have to think the
alkaline diet and not losing Calcium to balance the acidity in the meat
is what is causing the benefits to my knee, perhaps also some benefit
from the diet in other ways? I have to say I have not given up my
mineral supplements as I don't think I juice enough organic produce to
get enough. Juicing is something I'm still working on.

On the Budwig diet I gave up meat, eggs, sugar, white flour and gluten
grains, and butter but I still eat salmon once a week or less. I eat
dairy, fruit and vegetable salads, simmered vegetables, and some
Flaxseed oil blended with drained yogurt every day as a salad dressing
with spices. I also eat the allowed carbohydrates- buckwheat, millet,
rice, and quinoa, so now I'm eating carbs and my weight has been fairly
stable but either that or eating a lot of nuts has made me gain 4 lbs
back since right after Thanksgiving. I usually have problems with
weight gain in the winter though, gaining 15-20 lbs in recent years
that I have to lose during spring and summer when I can get out and
work in my yard. This year I hope not to do that- I'm not eating ice
cream, dark chocolate, tortilla chips and baked eggplant every day.:-)
Sigh.

I used to think buckwheat tasted bad (it does have a very strong
taste). I have tried soaking raw groats overnight and eating them with
flaked unsweetened coconut, chopped apple, cinnamon, and nuts, and can
enjoy eating it, imagining how healthy it must be. I also cook
buckwheat a couple of minutes in some coconut oil then add water and
cook until the water is gone, then I use it like a pizza crust,
spreading it in a pan then topping with pizza sauce for my DH or yogurt
for me since cooked tomatoes also cause me problems, adding pizza
spices and particularly cumin and turmeric to cover the taste of the
buckwheat, then cheese. The cheese can be melted or browned slightly
then I put onions, garlic, and mushrooms browned in coconut oil on top.
I find this very yummy.

I think just finding some satisfying replacements works for me. The
Flaxseedoil2 group has lots of recipes. I also like replacing sugary
chocolate with 2 Tbsp coconut oil, a teaspoon or less of honey or a tsp
or more of Stevia (1/4 tsp = 1 tsp sugar) to taste, I like it slightly
bitter. This is melted and stirred with cocoa powder. Nuts can be
added, or it can be used as a topping on homemade frozen dessert
sweetened with stevia. The frozen yogurt or whatever makes the
chocolate sauce harden so it's like eating a fudge sundae.

Have you tried taking Hawthorn berries in tea or capsules, and cayenne
for arrhythmia problems? I guess I don't understand why wheat would
help with that?
