I wish I were a biochemist and could explain but I'm just a tour guide - also oranges, which are packed with citric acid, have an alkalising effect. In fact the first person to be cured following the dietary advice of  Dr. Moerman (1893-1988) - ate oranges and lemons 'by the truckload'. His 'terminal' cancer disappeared and he lived to the age of 90. Maybe some of the scientists on this forum can explain how an acid can have an alkalising effect.
