I must disagree with the reason most people do not get enough selenium
is because they cook their food.
While cooking food may destroy selenium, the problem is far more that
nearly all vegetables and fruits do not have any selenium content, or
have precious little of it. As I understand it, if selenium is not
present in the soil in which produce is growing, the produce will have
little to no selenium in it. I do not know about the rest of the world,
but I understand that in the United States, the only states that have
sufficient selenium in the soil are some of the upper mid-western and
western states, such as North and South Dakota.
Even when one is eating foods that are supposed to contain selenium,
such as Brazil nuts, one needs to know that already-shelled Brazil nuts
contain little selenium, and that Brazil nuts with yellow, instead of
white, meat contain very little Selenium. Also, I believe understand
that Brazil nuts from Brazil have a higher selenium content than those
from other places.
Just one other thing: For those who decide to eat an all-raw or mostly
raw diet, be sure to chew your food very, very well before swallowing.
Otherwise you may be losing significant nutritional value.
