glucose and fructose.
Typical chemical composition of maple syrup:

Baking soda (sodium bicarbonate) immediately reacts when it mixes
with stomach acid.
NaHCO(3) + HCl ---> NaCl + H(2)0 + CO(2)
That is:
Sodium bicarbonate + stomach acid yields salt + water + carbon dioxide
Neither the sodium cation nor sodium bicarbonate is taken up
significantly into a cancer cell nor into any kind of cell. It is
difficult for it to pass through the lipid cell membrane. What does
find its way inside is pumped out through the sodium potassium
transporter system. Animation:

Tumors do tend to be efficient at exporting lactate which drops the
pH in the milieu of the tumor. A few extra sodium ions can help
neutralize these extracellular acids. The pH of the inside of cancer
cells tends to be slightly more alkaline than nontransformed cells.
This is a useful property for a clever clinician as a technique
called "ion trapping" can be utilized to increase the concentration
of weakly acidic antineoplastics (pKa ~ 5-6) inside the cell.
The bottom line: Maple syrup with sodium bicarbonate delivers sugar,
salt, and carbon dioxide to the body. You can get the same result by
eating salted pretzels while drinking Coca Cola. I am unfamiliar
with this as a treatment for cancer.
A similar result can be obtained by munching on Alka-Seltzer tablets
while sucking on a lollipop.
BTW, the aluminum in question is a component of baking powder, not baking soda.
Now the good news: Anyone who told you that maple syrup and bicarb
is a cure for cancer may be uninformed, but they were not trying to
separate you from your money. Their intentions were honorable.
