Oh, I forgot earlier to say.... Sodium (Na) is an ion. It is not
covalently bonded in a salt, it is ionically bonded. In the case of
sodium bicarbonate (baking soda) sodium (an ion) is ionically bonded
to bicarbonate (another ion). This is a relatively weak bond and is
easily broken in polar substances such as water. In fact...sodium
bicarbonate is also an amphoteric molecule, meaning that it can
dissolve in either an acid or a base. This is basic chemistry, which
by the way I talk about in the first session of the biology class I
teach every semester at a local college. If you want to challenge me
on this again, be my guest. I'm curious to see what you'll come up
with.
